Blueberry Pie
Ingredients:
2 1/2 cups all-purpose flour
1 teaspoon salt
1 teaspoon sugar
1 cup unsalted butter, cold and cut into small pieces
4-6 tablespoons ice water
6 cups fresh blueberries
1/2 cup white sugar
1/2 cup brown sugar
1/4 cup cornstarch
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons unsalted butter, cut into small pieces
Instructions:
Gradually add the ice water, one tablespoon at a time, until the dough comes together in a ball.
Divide the dough in half and shape each half into a disk. Wrap in plastic wrap and refrigerate for at least 30 minutes.
Preheat the oven to 375Β°F (190Β°C).
Roll out one disk of dough on a lightly floured surface to fit a 9-inch pie dish. Transfer the dough to the pie dish and trim the edges.
In a large mixing bowl, combine the blueberries, white sugar, brown sugar, cornstarch, cinnamon, and nutmeg.
Pour the blueberry mixture into the prepared pie shell and dot with the butter.
Roll out the remaining disk of dough and place on top of the blueberry mixture. Trim the edges and crimp to seal.
Cut several slits in the top of the pie to allow steam to escape.
Bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
Let the pie cool for at least 30 minutes before serving.
